I brewed an Old Ale last November, my first funky beer, and for a long time it sat in secondary doing nothing. About a month ago, it started to look like there was some activity on the rise, and now it’s starting to look like I expected. My plan is to let it age a year, so we have a few more months ahead, but the visual and aroma are very promising.
