I'm not setup to brew lagers, so I figured I'd use it on this.

Yea I love US-05, but I have a packet of S-23 sitting in my fridge that needs to be used. I don't think it will be a problem, it will be fruitier than a normal
lager. You could save some money and use a dry american yeast (s05)
and get the same profile, and it would be happier at that temp range.

The problem is, the lowest I will be able to keep it is ~65F. Think that will cause problems?

I’m thinking of brewing this with brown sugar and the same lager yeast. The lager yeast did a great job, it finished out to about 8.5%ABV, and is very, very smooth. It goes down a little too easily, so be careful! I am very glad that I didn't use wine yeast, it finished with a little more residual sugar than with the wine yeast, which I like.

It came out great!
