Chocolate Oatmeal Stout: Follow up on fermentation
Woke up to a vigorous fermentation, which was pleasing, and I thought it would be ok because of the fermcap. Check out how fast the airlock is rocking it, with only about 1/2 inch of krausen!
I called home this afternoon to find out that the krausen was up to the neck of the carboy, and the airlock was going completely beserk. I begged my faithful beer wench to swap out the airlock for my blowoff tube, and bring up my sanitizer bucket.
After the blow off tube had been on for 3 hours, the krausen settled back down, but fermentation was still going strong (echoing through the house). The carboy is now in my boil kettle, filled with cold water and ice packs to try to cool it down.
